Boil eggs and put aside to cool. Peel eggs and cut them 2 to 4 slices if large. Set aside.

On a heated pan, add oil and stir fry ginger onions garlic chillies. Add masala powder curry powder cumin powder coriander powder turmeric powder and season. Add sliced eggs and chicken stock then cover. Do not stir often to avoid breaking the eggs. Cook for at least 10 minutes till water evaporites. Once dry, turn off pan. Dish out and serve with bread Nan roti or rice.
