Looks totally amazing. I imagine that you can't really make any compromises to the ingredients, the bread especially?

sure you can! For example if you wanted to make tapas to represent Spanish cuisine, replace the sopresseta with chorizo, tomato explosion with chili explosion or a nice tapenade, etc. be creative! use different bread...each dish has its own avenue of simple changes that can be made to elevate it.
