fish congee(porridge)

材料・調味料 (2 人分)
cooked rice
1 cup
any white fish cutlet
1 piece
chicken broth(optional)
1 cup
water

dill

scallion

shittake mushroom (or any choices of mushroom)
1/4 cup
ginger

In a large pot, add 2 cup of water, cooked rice, and half of a ginger on high heat

Prepare the fish: cut the fish into bite pieces. Then marinated it with a pinch of salt, pepper, 1/2 table spoon of sesame oil, 1 table spoon of minced ginger

soak the mushroom in hot water if using dry mushroom

Wash all of the greens. Minced dills and scallions. julliance half of the ginger

when the water in the pot reduce to half (about 15 minutes), add chicken broth and gently add in the fish that have been marinated. Do not stir after added the fish.

drain the mushroom and added to the pot. On medium heat, shimmer for about 15 more minutes

after the fish have been cooked, and the broth have reduced a little, add in the fry shallot, dill, and scallion

season with salt if needed. If using chicken broth then taste before add salt in

serve it in a bowl and top it with a little more scallion, cut ginger, and sprinkle on pepper.

ポイント

Do not stir after added fish because the fish can be easily broken
Use chicken broth instead of use water only, since it help add more flavor into the porridges.
Marinated fish before add to the pot so that the fish will not create any unwanted fushy smell.
Top with ginger will inflavor the porridge more
This dish is really good too eat during winter because it help stay warm, and it would be best to eat if having a cold because ginger, scallion, and dill is the best medinces to cures these sick
