Salad: Peel, wash, cut the celery. Cut the apples in small bites. Peel the carrots and slice julienne style. Mix the peanuts, add the yogurt dressing, and place in the refrigerator before serving.

Yoghurt dressing: In a small bowl, beat together yoghurt and lemon juice until smooth. Stir in mustard, honey and chives. Refrigerate until ready to serve.
