Red velvet Swiss roll

Flour
180g
Cocoa powder
60g
Baking powder
5g
Egg

Sugar(or lesser)
180g
Oil
30g
Sour cream
30g
Vinegar
5g
Red coloring
30g
Vanilla essence
5g
Salt
2g
Cream cheese frosting
For spread
作り方

1) Beat the eggs well with an electric beater using the whisk attachment.

2)Add the sugar and beat well till double in volume

3) Beat in the oil, sour cream, vinegar, vanilla and food colouring.

4) Sift over the flour, cocoa, baking powder and salt and fold through until well combined.

5) Pour the mixture into a greased and lined 25x34cm Swiss roll pan.

6) Bake at 180°C for 12-15 minutes or until the top of the cake springs back when you touch it.

7) Remove from oven and turn the Swiss roll on to a sheet of non-stick baking paper that has been sprinkled with castor sugar.

8) Peel away the paper lining, trim the edges and roll up with the paper.

9) Cool completely.

10) Unroll and fill with frosting, roll up and spread the outside with more icing.
Decorate with coloured sugar if desired.
