Cycladic chickpea fritters;)

レシピ
材料・調味料 (7 人分)
Dry thick chickpeas
250g
Mashed dried onion
2
Finely chopped spring onion
2
Finely chopped mint
1/2bunch
Finely chopped parsley
1/2bunch
Flour
220g + more
Finely chopped marjoram
1bunch
Laurel leaves
2
Baking soda
1tsp
Salt, freshly ground black pepper
To taste
Olive oil for frying
作り方

Boil the soaked chickpeas, together with the bay leaves, in salted water 20-30 minutes and strain.

Finely chop the vegetables and herbs.

Mash the chickpeas in a food processor.

Combine the chickpea paste with the vegetables, herbs, flour, salt and pepper in a large bowl and mix well.

Pour the olive oil in a deep frying pan and heat well. Shape the chickpea mixture into relatively big and flattish patties.

Fry the chickpea patties until light brown and serve in a platter.
