Persian Style Crispy Basmati Rice with Cumin topped with Okra & Beef Stew 「خورشت باميه با برنج و زيره」「コレシュテ・バーミエー」

I was craving for this okra stew for a loooooong time and finally today I had the time to get it all brewing 😋

Shallow fry the Okra and put it on the side when its colour changes and it becomes soft.

Fry onions until golden and add your meat (lamb, beef or chicken) cook until the meat changes colour then add salt, pepper and turmeric to taste. Mix well and then add tomato pure (to keep the colour nice and vibrant try to fry the pure away from the rest of the ingredients and mix after a couple of minutes).
Personally I also like to add some freshly chopped tomatoes for a more creamy textured stew.

Add some water and fresh lemon juice and cover on a low heat to allow slow cooking. After about 20 minutes add the previously fried okra to the stew and continue slow cooking until the liquids thicken down. The longer you cook it the tastier it becomes!!

Serve on top of rice along with some green salad like fresh leaves and herbs.
