As a healthier option instead of the traditional Persian butter rice I used a 50-50 mix of brown rice and barley as my main source of carbs.

The sauce is a chicken stew in an onion and tomato based sauce.

Here I have mixed the barberries in the sauce rather than the traditional Persian way of mixing it with the saffron rice.
