Hortosoupa: Greek winter vegetable soup;)

材料・調味料 (7 人分)
Olive oil

Salt and pepper
To taste
Cabbage, coarsely chopped
300g
Potatoes
2pcs
Small onions, coarsely chopped
2pcs
Carrots, diced
2pcs
Leek, white part only thickly sliced

Small fennel bulb, coarsely chopped

Celery stalk, sliced
1
Celery leaves, chopped

Freshly squeezed lemon juice

作り方

Pour 4 cups(1l) of water into a large pan (just cover the veg), add olive oil and bring to a boil. Season with salt and pepper and add all the remaining ingredients except the lemon juice.

Cover and simmer for 30-40minutes or until the vegetables are tender and the soup has reduced.

Stir in the lemon juice and remove from the heat. Ladle into bowls, sprinkle with freshly ground black pepper and serve.
