Pour 4 cups(1l) of water into a large pan (just cover the veg), add olive oil and bring to a boil. Season with salt and pepper and add all the remaining ingredients except the lemon juice.

Cover and simmer for 30-40minutes or until the vegetables are tender and the soup has reduced.

Stir in the lemon juice and remove from the heat. Ladle into bowls, sprinkle with freshly ground black pepper and serve.
