INGREDIENTS
3 1/2 to 4 cups of All Purpose Flour
1-1/2 cups of Warm Water
1-1/2 tsp of Yeast
2 tsp of Sugar
2 tsp of Salt
RECIPE
•Add the sugar and yeast in a small bowl.
• In the bowl, add the flour and salt with the yeast mixture.
• Mix until you have a smooth and creamy looking dough.
•Oil a large bowl and place the dough in the bowl, place it somewhere warm to rise for about an hour or until doubled in size.
•Dump dough on a floured surface and cut into 3 equal pieces, roll each piece into a 12 inch rope and place them on a three piece baguette pan.
•Cover with a towel and let them rise until doubled, about an hour.
• Preheat the oven to 475 degrees, place a cast iron skillet on the bottom rack in the oven.
•Place the baguette pan on the top shelf, quickly add 1 cup of water to the pan and shut the oven door immediately.
•Let them bake for about 30 minutes or until crispy and brown.
•Allow them to cool a bit before serving.
FISH CAKE
INGREDIENTS
Baked fillet (fish of any choice)
Breadcrumbs
Green onions
Eggs
Lemon juice
RECIPE
•Place ingredients in a large bowl. Stir the ingredients together with a fork, breaking apart the fish, until evenly combined.
Portion mixture into patties (about 2 tablespoons each).
Coat the bottom of a skillet with cooking oil and heat to medium-high. Fry fish cakes in batches until golden brown, about 3 minutes per side.
•Serve with mayonnaise on top and baked green beans at the side.
