Chicken Fritters with Broccoli Cheese Balls

INGREDIENTS
For Chicken Fritters:
250 gm chicken- boneless and cut into small pieces

2 eggs- slightly beaten

1/2 cup all purpose flour (maida)

1 Tbsp garlic paste

1 Tbsp ginger paste

1 Tbsp salt or to taste

Water

Vegetable oil for deep frying

RECIPE

Mix together the chicken, egg, flour, garlic and ginger paste, salt and enough water so as to have a thick batter. Leave it for 5-10 minutes.

Heat the oil and keeping the heat high drop pieces of chicken and fry to a golden brown.

Drain on absorbent paper and serve with hollandaise sauce and basil.

INGREDIENTS
For Brocolli Balls:

1 1/2 cups fresh broccoli

1 cup shredded Cheese

1/2 teaspoon chilli flakes

2 1/4 cups Bread crumbs

1/2 cup all-purpose flour

2 eggs, lightly beaten

Vegetable oil

RECIPE

Steam broccoli until slightly softened. Let cool.

Finely chop broccoli. Place in a large bowl.

Add cheese, chilli flakes, 1/4 cup bread crumbs, and 1 egg to bowl with broccoli. Stir well.

Use your hands to shape mixture into balls using about a rounded tablespoon for each ball.

Place balls on a plate and refrigerate for at least 30 minutes.

Place flour in a bowl.

Place the 1 lightly beaten egg in a second bowl and mix in 1 tablespoon water.

Place remaining 2 cups bread crumbs in a third bowl.

Pour about 2 inches of oil in a oven or heavy pot.

Remove broccoli balls from refrigerator, coat in flour, dip in egg mixture, and then coat in bread crumbs. 

Fry about 4 balls at a time cooking until golden brown on all sides.

Drain on a paper plate and serve.
