Vegetable Cottage Pie

材料・調味料 (6 人分)
Broccoli cut into florets

Cauliflower cut up
1
Leek chopped
1
Baby carrots
2 packs/tins
Potatoes chopped

Milk
200ml
Butter
1tsp
Olive oil
1tbs
Large onion

Bell peppers

Mince/Quorn/Toffu (optional)

Stock cube beef or veg

Black pepper

作り方

1. Boil or steam the broccoli, cauliflower & leek for 10/15 minutes.
2. Separately, boil the potatoes until soft. Drain and mash with milk, butter & salt.
3. Meanwhile, add the olive oil to a frying pan. Fry the onion for 5 minutes till soft.
Add the chopped peppers and mince and cook till brown (you can skip the mince if you want a vegetarian cottage pie, or add a tin of lentils or beans)
4. Crumble in the OXO® cube and stir into the mince (use a vegetable stock cube if making a vegetarian pie).
5. Add the mince mixture along with the steamed veg into a pie dish. Spoon over the creamy mashed potato and spread it out to the sides of the dish. Add a pinch of mixed herbs and black pepper on top.
6. Bake in a 180 C / Gas 4 oven until hot and bubbly and golden brown on top.
ポイント

Add vegetables that need using up, such as mushrooms, cabbage, peas, sweetcorn, spinach, lentils or remove the mince/Quorn/Tofu is optional make it vegetarian.
