Fennel pies from Crete;)

レシピ
材料・調味料 (8 人分)
For the dough:
All purpose flour
1/2kg
Olive oil
3tbs
Raki or strong alcohol such as vodka
3tbs
Lemon juice
1/2 pcs
Salt
1pinch
Water
1cup
For the filling:
Fennel chopped
300g
Spinach chopped
300g
Spring onion chopped

Olive oil
1/2 cup
Salt
1tsp
Pepper, oregano

Prepare dough by mixing in a Basin all the ingredients. We keep kneading until dough becomes smooth and not sticky. Leave it covered to "rest" for half an hour.

In another Basin pour all the ingredients for filling, mix with a spoon. Add salt ant stir with your fingers greens with salt to produce some juice and leave for 20-25 min. Drain and add pepper, oregano and olive oil. The filling should be spicy well seasoned.

Split the dough into 10-12 pieces and form balls. Roll out each ball diameter 12-15 cm sheet. Put 2tbs of filling in the center. We close the edge by pressing them to form pouch. Pushing with the hands to make disk. Flour kitchen counter and rolling pin and roll out carefully into a thin pita.

Fry with a little olive oil, turning on both sides. Until you finish frying, keep the pies draped in Tupperware, grease with a little more olive oil on both sides in order to stay soft.
