Who needs canned tomatoes when you can oven roast your own, along with homemade roasted garlic. Less than 7 minutes to prepare, & then into oven @ slow oven @ 250 degrees for as much as 90 minutes. Olive oil, basil, salt & pepper- nothing else. Stir fry some zucchini wedges @ rainbow of Holland Peppers (red, orange, yellow; & green (optional) toss with you favorite pasta or grain/couscous farro or quinoa.
