Zucchini with Pinoli Sauce ;)

Olive oil
For frying pan
Bread crumbles Panko
1 1/2cup
Salt
3/4tsp
Large egg

Courgette cut into 3-inch long by 1/2-inch wide strips

Pour enough oil into a large frying pan to reach a depth on 2 inches. Heat the oil over medium heart up to 180C.

Stir the Bread crumbles, and salt in a medium bowl to blend. Whisk the eggs in another medium bowl to blend.

Dip the courgette in batches in the eggs to coat completely. Then coat the courgette in the bread crumble mixture, patting to adhere and coat completely.

When the oil is hot, working in batches, fry the courgette sticks until they are golden brown, about 3 min. Transfer the fried courgette to paper towels and drain.
