Eggs on toast

材料・調味料 (1 人分)
Cage free, natural eggs
2 grade A Large
Sour toast
1 slice
Plum tomato
1
Peeled garlic
1 clove
Butter
1 Tbsp
Spinach leafs
Hand full
Pink Himalayan salt
Pinch
Chopped scallions
2 Tbsp
Fresh cracked pepper
Pinch
作り方

Start up a pan on medium/high heat to cook scrambled eggs.

Add a butter and let melt. Once melted crack in both eggs

Let eggs firm up about half done. Use a wooden spoon and gentle break the form of the eggs by scraping the pan in a line direction.

Don't not scramble eggs or flip, but continue to break it up without flipping the egg. We are looking for a marbled yellow and white look.

Sprinkle salt and pepper over eggs. Take eggs off the heat right when all the white is just firmed up. And set aside

Quickly take your sour bread slice and lightly butter and toast to a slight golden brown crust on both sides.

While toast is still hot. Take peeled garlic and rub vigorously on the surface of both sides of the toast.

Start assembling, first lay down leafs of spinach, then roughly 4 thinly sliced tomatoes.

Take your eggs and gently lay on top of the tomatoes. Sprinkle with scallions and enjoy :)
