place in heated skillet with a small amount of vegetable or olive oil

sear both sides and cook till done..approx. 10 min.

place on top of 6 oz rice pilaf , in m8ddle of the plate.

while dish is cooking, combine heavy cream, sour cream, lime juice , white wine , lime zest , salt and pepper in small sauce pan..simmer, whisking often , into well mixed, hot and smooth.

drizzle cream citrus sauce over fish in desired pattern....( amount of sauce on fish should be approx. 2 oz..)

serve with a thin wedge of lime atop the mahi, and garnish with chopped cilantro
