Chop the onion and cook in a frying pan till translucent. Cool it off.

In a large bowl mix together meat, breadcrumbs soaked in water, two egg yolks, herb mix, salt & pepper and onion.

Preheat the oven to 200C.

Place a 40cm aluminum foil on work surface and sprinkle with oil.

Place a meat mixture onto the foil and pat into a thin rectangle, then place 3 hard boiled eggs on one side.

Using the foil roll the meat gently starting from egg side into the firmly packed spiral, peeling away a foil as you go. Cover the sides of the spiral with meat well.

Cover the roulade with aluminum foil well from all sides, set in the oven tray and pour water in the tray. Bake in a preheated oven for 3minutes, then take off the aluminum foil and continue baking for another 15min.

Allow to rest till cooled down and then slice gently to serve.
