Oven 425.. Throw in the cleaned and whole butternut squash(s) and roast for about an hour. Check to see if shell is soft enough. If so, remove it and let it cool somewhere.

Slice the squash in half. Spoon & discard the seed middles. Mash up the squash in a boiling pan... Use milk at your preference. I use 1/2 cup of milk. Bring to a boil and toss in blender to purée. Add cinnamon, cayenne pepper to your taste and wala. Top off with feta cheese if you wish. My favorite winter soup. *If you want something a little more, make vanilla scones.. YUMMY when paired together!
