Crema Catalana

レシピ
材料・調味料 (5 人分)
Milk
400ml
Cream
250ml
Cinnamon stick
1
Strips of zest from orange
3
Strips of zest from lemon
3
Egg yolks
7
Sugar
90g.
Corn flour
20g.
作り方

Put milk,cream,orange and lemon zest in a pan,bring to boil,turn off heat,cover and leave to infuse for 1 hr.

In a bowl,whisk yolks,sugar,corn flour until soft and pale.Strain the milk and add in egg mixture.

Slowly heat up,keep whisking until thick(like making ice cream),pour in ramekins and leave to cool.Sprinkle sugar and caramelize.

From Spain,similar to creme brûlée,but cinnamon,orange and lemon peel are steeped in cream mixture before adding eggs in.

I have put up the recipe,but have to let you know this doesn't require baking and it does not set like creme brûlée,instead it's like a thick cream.Enjoy!
