I also had mascarpone at home,so I mixed it with coconut cream and sugar,that went to the base,then topped with fresh lychees and watermelon,then a coarse ice of lemongrass is served on top,like you said all very harmonised,so enjoyable in a hot day,no fuss to make too!
Thanks so much! No,I didn't use any recipe,just wanted to make a lychee dessert and kind of build around what I had in the pantry and fridge. But it's real simple,mixed coconut cream and mascarpone together m,about 2 part to 3,then add enough caster sugar,that's the base.For lemongrass granita,its was just chopped up lemongrass,water and sugar mixed together simmer a while and cool,add a bit of lime juice,strain onto a tray then freeze,use a fork to scrape it a few time and there you go!Sorry no measurements,I rarely work with them these days,I just taste and adjust...
