Starter can be prepared only on the water and flour, as for bread, even without garlic. Although if you look in the Polish-sauce, nearly all the recipes contain a standard set of ingredients: flour, water, garlic, spices. And in fact, garlic has antibacterial and slows the fermentation process.

Nigella* and marjoram* are not required ingredients, but if you have add from beginning.
Mix flour with a little water. Into the glass jar pour all spices, flour, cover with water and mix well. Close piece of gauze or clean or a clean cloth and leave in a warm place for 3-4 days.
Zakvas may be refrigerated in a tightly sealed bottle for 2weeks.
