Preheat oven to 425 degrees. Cut off the top of the tomato and scoop out the insides (save for the side salad). Crack two eggs into the tomato and bake in a glass dish for 20 minutes.

Meanwhile, cook the bacon over medium heat and crumble when crispy.

Combine the tomato and green pepper with oregano, lemon juice, garlic salt, and season with fresh cracked pepper.

When the eggs are cooked, top with the crumbled bacon and diced pineapple. Broil for an additional five minutes and serve with the tomato and pepper salad.
