Today vegetarian: Eggplant rolls filled with cheese, bread, pinenuts, egg, grapes, garlic, olive oil and oregano with a topping of tomato and mozzarella

Eggplants, fairly large

Olive oil
for frying the eggplant slices
*** Filling ingredients ***
Provolone cheese (or Emmentaler)
100 grams
pinenuts
75 grams
raisins (or fresh grapes)
50 grams
olive oil regular
4 - 5 tablespoons
breadcrumb white
2 tablespoons
garlic
2 cloves, pressed
parmesan cheese
2 tablespoons grated
basil or oregano
1 tablespoon chopped
egg whole
1 beaten
*** Topping ingredients ***
chopped and peeled tomatoes
1 can
Mozzarella
2 balls
SeaSalt and black pepper
for seasoning

Slice eggplants lengthwise in 0.5cm thick slices

Bake eggplant slices in skillet with elaborate olive oil until golden brown. Place done slices aside and fry all in several batches.

Mix all ingredients for the filling to a well mixed consistency.

Preheat oven to 190deg.Celsius

Fill slice of fried eggplant with filling and make rolls. Put rolls in ovenpan until bottom is covered totally.

Season rolls with salt and black pepper to your liking.

Pour can chopped tomatoes over the rolls.

Slice mozzarella balls into 0.5cm thick slices and arrange them on the tomatoes. Grind some black pepper over the mozzarella.

Put in oven for 25 - 30 minutes

Take out of the oven and enjoy! :-)

Original Italian name: Involtini di Melanzane al Formaggio.
Can be eaten warm, but tastes cold maybe even better! All the flavours are better once cold the next day, so make enough and try it warm as well as cold. :-D
