In a deep bowl, sift in the flour and salt and make a well in the middle. Slowly start adding water kneading all the way through till you make soft dough that doesn't stick to the hands. Oil the surface, cover with plastic wrap and left it rest for at least 25min.

Prepare the filling by combining cheese, egg and salt. Crumble it well with a fork.

Prepare the working surface by oiling the table.

Spread the dough with the rolling pin and continue spreading it with your hands till it becomes so thin that you can see through your fingers. Add oil to the surface as necessary.

Once the dough is almost transparent, start distributing the filling to the edges of the dough.

Start rolling the pastry towards centre, pulling gently at the same time towards your self - this will additionally stretch your pastry, ensuring thin, until all is rolled up.

Cut the pastry in the middle and continue to roll inwards, until all is rolled up. You will get a circle of made pastry/pita, which you need to cut and start rolling into a spiral form.

Oil the top of pita - spray is fine, and bake for 30-40min on 200C till the surface is golden brown.
