Pat dry the meat with a paper towel and sprinkle salt on the meat left at room temperature before cooking it.

Heat 1tsp vegetable oil over a medium-high heat in a saute pan. Then, add the meat to the pan and sear all sides.

Add mirin, soy sauce and mentsuyu to pan. When it comes to a boil, turn the heat to low and cover. And then simmer for 6 minutes flipping halfway through.

Transfer and wrap the meat in baking sheet and aluminum foil. And wrap it again with a kitchen towel(tea towel). Let it cool down(for 2 hours) .

Reserve the pan juices and drippings in the saute pan to make the gravy. Add grated onion into sauce and simmer over medium heat. Stir with a spatula until it naturally thickens.
ポイント
The sauce will thicken once it is cooling down. Wasabi goes well with sweet gravy sauce.
