Temper half the chocolate over a baine marie. Grind the other half of the remaining chocolate to "crumbs" and add slowly to the tempered chocolate until you see it start to set on the sides of your bowl (about 28 degrees Celsius). It should take about 1min for a sample to set. Make sure it looks shiny and has that nice snapping sound.

On a baking tray lined with parchment paper, pipe a few circles at a time and quickly add the mixed nuts and candied walnuts on top before the disks set completely. You may sprinkle or brush with edible gold or silver powder for a nicer look once the chocolate has set.
