Peel and julienne the onion and saute in a medium pan with 1 tbsp of your butter. (For extra flavor add a pinch of dry thyme and a tsp of balsamic vinegar). Season with salt and pepper to taste (T.T.). Turn the temperature to low-medium. Peel the potato and carrot and dice, a medium dice is fine. Add them to the pan with the onion and cover to help steam them a bit. Dice the red pepper and add to the pan, remember to check seasoning and adjust to your taste. When the a fork easily slices the potatoes, add the grated cheese and let melt.

In a separate pan, cook the sausage and egg to your liking using the remainder of your butter.

The yogurt is for drinking while you eat, it's optional. The goat's cheese is to spread on the toast for serving.
