To: madaraneko thank you!We simply call it meaty crab(肉蟹),it's green shell,similar to mud crab.In fact most big meaty crabs should work,or even jumbo prawns,crayfish and lobster!
To: madaraneko Got to give you this!First prepare crab,crack the claws.Then dry roast whole pepper(quite a lot) in frying pan,grind coarsely(important)with pestle and mortar.Deep fry crab(needs to be dried,will splatter!) til almost done,set aside.
To: madaraneko .Make sauce in wok :sauté mince ginger and garlic,add black pepper,then oyster sauce,soy sauce,Chinese rice wine,big knob of butter(!),little sugar,water,throw in the crab,stir around,cover for few minutes,ready when crab is cooked through and sauce reduced.
To: rikk there is a very popular Vietnamese restaurant which serves roasted pepper crabs in San Francisco, and most of the customers there order a side garlic noodles. I guess it is Vietnamese tradition? Maybe?

To: madaraneko When we go to restaurant and order crab,it's usually eaten on its own,because it's meant to be messy eaten with your hands,and it'll be difficult to grab the chopsticks to eat other stuffs in between.
To: madaraneko We normally order fry rice or noodle(minimal style)at the end of the meal.At home we just serve everything with plain rice. To have seafood serve over(not on the side) noodle is very common all over Asia,
To: madaraneko ,a very famous Cantonese dish-lobster with master-stock(or cheese) sauce is serve over e-fu noodle,and the main purpose being there is to soak up the delicious sauce.May be you could serve it like this and let your customer eat the crab first snd noodle later.
