Chocolate banana & peanut butter muffins

butter (softened)
75g
sugar
75g
eggs

baking powder

banana (ripened)

peanut butter

Using melted butter, mix in sugar with spatula until smooth. Add 1 egg at a time and continue to blend evenly. Slowly add sifted flour as not to create lumps. Add baking powder and mash in bananas until no powder remains.

Add diced or chunks of chocolate and peanut butter and mix evenly. Preheat oven to 200℃ while pouring into muffin tins trays and decorate with remaining ingredients such as banana, peanuts or chocolate.

Bake for 25 mins and place tin foil lightly on top about half way through to prevent tops from burning. Enjoy with your choice of beverage once cooled down to room temperature.

*used soy milk this time & turned out creamy!
**bar of chocolate or chips may be used as you wish
Since the muffins rise, toppings may not remain in the middle. May also add dry seeds, berries or raisins. Chunky peanut butter makes for a nice texture
