Baked rice in young coconut with seafood

Fried rice with coconut flesh, onion, raisins, egg,baked in the coconut,then top with mixed seafood and coconut cream.One of the great thing Thailand brought us!

This is young coconut,not much flesh but there is coconut "water" in the centre,it's almost clear with no colour,very fresh and delicious,not exceedingly sweet.This coconut is only good for it's water.But I didn't cook with this water(I drank it!),I just scoop out the soft flesh and fried rice with it.The seafood was cooked in coconut milk(this one from can),coconut milk comes from extracting from matured coconut flesh,it's white,thick and creamy,more aromatic and lots of calories!
This is the way this dish served in Thai restaurants,for more stunning presentation,I doubt it makes many difference to the taste.
I don't think the coconut shell keeps well(unless you dry it),it's very easy and cheap to get in HK,so I just threw it away!

You are right,this is a typical pattern of Thai ceramic,I brought this platter in Bangkok long time ago,and I am still loving it!Please have Koji San to take you there,there are many pretty ceramics to choose from,not expensive too!

I love Thai food too,only they have to be non spicy!
Actually it's not much of a big deal for us here,we have many Thai restaurant here and they all serve this one(the other popular one is pineapple fry rice),and it's all to easy to get coconut if we want to tackle this at home!
I also like this presentation,it sure reminds me of my traveling days in Thailand too！
Too bad coconut is not widely available in Japan,otherwise you could try making it,seafood in coconut sauce is such a great combo!

Thank you,but I didn't create this,in fact it's quite traditional Thai food,unlike the matured coconut,the flesh of this young coconut is quite soft and easy to eat!

This may not be available in Japan,but if you travel and scuba diving in South East Asia,you will see this young coconut everywhere.It's green on the outside,but when it reaches HK's supermarket,the shape has already been cut like this👆,we have to use a cleaver to chop open the top.The juice is very delicious,and there is little white flesh inside too,I used this white part to fry the rice with.
I cooked the seafood in canned coconut milk,then put on top of the rice and serve.Really great tropical flavors,and looks impressive too!

3.5hr....In Japan, it's almost domestic trip..I envy you!!! Yup,I need long flight for Thailand. I wanna go Thailand this summer,but depend on my condition..😔

really? I like Thai food and I've eaten many times but never seen this kind of food. When I think of Thai style 炒飯, that's usually stir fried with pineapples and served in the pineapple dish.🍍
