Mexican scrambled eggs

材料・調味料 (1 人分)
Flour tortillas (corn or wheat)
2 pc
Egg (M)
2 pc
Tomato (red medium size)
60gr
Yellow onion
30gr
Green "chile de árbol" (bird's beak chile)
2 pc
Unsalted butter
1/2 table spoon
Cooking oil
1 table spoon
Salt
A pinch
Grounded black pepper
A pinch
作り方

Crack the two eggs in to a mixing bowl with the salt and pepper

Beat them until smooth

Finely chop the tomato, onion and chilli (about 1/2 cm) and mix it with the eggs

Heat the pan on a medium fire and met the butter with the cooking oil, make sure is hot and evenly mix with each other and add the egg mixture. Leave the egg to cook slowly for about 2 minutes and start moving the eggs with a spatula from the dude Ti the center, repeat the movements and mix them until you have a smooth white yellowish egg. When done, move them to a plate.

In the mean time warm up the tortillas, one by one if you using a common non-stick pan. Turn the tortillas over a couple of times and wait until the tortilla start bubbling, turn it over once more until the tortilla gets a nice smooth brown spots on the surface.

Serve the eggs on the tortilla with a slice if fresh avocado or your favourite sauce.

You can add chunks if your favourite ham and / or cheese and serve it with a delicious Refried beans on the side.
