Preheat oven to 220C. Into a large bowl, shift flour and baking powder. Stir sugar, then rub in the butter using your fingertips, until mixture resembles coarse breadcrumbs.

In a small bowl, whisk egg and milk. Make a well in the centre of flour, pour in egg mixture and mix to form soft dough. Turn onto a lightly floured surface and knead lightly.

Press dough out to a 2 cm thick. Cut out scones using a floured 5 cm pastry cutter. Avoid twisting the cutter or the scones will rise unevenly.

Arrange scones close together on a greased and lightly floured baking tray. Brush with a little milk and bake for 12-15 minutes or until risen and golden.
