Radish Cake

材料・調味料 (10 人分)
Radish
4.8 Kg
Rice Flour
350 g
Chinese Sausages
2 (100 g)
Chinese Cured Meat
100 g
Dried Shrimp
35 g
Wheat Starch
1 tbsp
White Pepper Powder
2 tsp
Shallots
3 heads
作り方

Soak dried shrimp with a cup of warm water. Peel and shred radish. Dice shallots, sausage and cured meat .

Collect radish juice & shrimp soaking water. Then mix with rice flour and wheat starch.

In a wok stir fry the shallot, cured meat, sausage and dried shrimp for 5 minutes.

Add the radish to the fried ingredients. Cook the radish for 15 minutes until soft and translucent.

Remove from heat. Add into salt and pepper powder. Mix in the flour slurry until thoroughly form a paste with the cooked radish.

Pour the paste into a greased pan. Steam it for 60 to 90 minutes depending on the pan size.

Cool the steamed cake . Slice into triangular cakes. Pan-fry each size till golden brown to serve.
ポイント

Add salt after radish is cooked to prevent formation of bitter taste
