Chop all the vegetables and add to a pot full of water. Add your lentils. Bring to the boil, cover and simmer on low heat for about 20 minutes. Add water to the soup if it gets dry.

Add soya sauce, olive oil and some salt, pepper and origano (or any herbs you rather prefer). Stir and taste to check if the lentils are cooked. Remove from heat and serve hot.

Remember to add water to the soup during cooking as water will evaporate leaving it dry.
