Tripe,Roman style.
I had an excellent one at 'Armando al pantheon',the perfect tenderness,and no funky smell.
I learned a great technique removing the smell from chef Mario Batali,using vinegar ',and vanilla!
I simply ADORE Mario Batali!!! Have you met him?

あちらで美味しいトリッパを食べたの? トリッパって見た目はグロテスクなのにふわふわで美味しいよね。家で料理するのは難しそう。しかも手に入らないよ😂 下処理が大変そうなイメージだけど、リックの手にかかればレストランの一皿みたい☺️

Thank you,I was quite happy with this!I had a wonderful tripe at Rome,apparently Romans are good at cooking offals.I had to give it another trial,last time I made I wasn't too happy about the strong smell.The recipe is straight forward,just need to take time to remove the smell,I used vinegar and vanilla,also steeping the tripe on a few changes of water,it came out really good this time,it's not that difficult after all!

That's so sweet of you,I am feeling good!Right now I just enjoy cooking at home,restaurant is too much work for me,I am very lazy these days,but I could cook for you and friends anytime.it would be my honor!
I used to think making tripe is too much hassle,but since I have good method removing the smell this time,I think it's worth it,most of the work is just steeping,and you don't have to stand around too much.So you like offal and tripe,I'm a little surprise,it's too much of guys food,well,I could say you have good taste of food!
I made the bread too,actually it's the focaccia that I made for my the sandwich last time,I made lots of it!
