It's absolutely fine,not dirty at all,it's just got some rustic feel,and it's meant to be like this done at home!But the important thing is that your pork looks super delicious,I love it tender and juicy,and with a bit of fatty bits,really perfectly done!Sure will go well with this sauce too,which g

gives the pork a nice contrast.So I guess you use dark raisins,it's totally ok!Thank you for trying this,I also love this versatile sauce,simple to make but with a complex flavour!

So I found this sauce goes well with bread.👍

It's perfectly fine,I didn't have the green ones and I used the dark ones when I did this the first time,it went well.And I should have called them "sultanas" too.I also forgot to mention to use very know heat when simmering so the liquid would be cooked off so much,so you did the right thing adding

more stock!I apologize for not putting this in too much details!Great idea with bread too,it's really some kind of chutney,isn't it,I would add cheese also!
