Italian Pistachio Cookies

Almond Meal
100g
Caster Sugar
100g
Egg Whites
50g (1-2 eggs)
Finely Chopped Pistachios
90g
Roughly Chopped Pistachios
100g
Icing Sugar

Mix well together the almond meal, caster sugar, finely chopped pistachios and egg whites. Form the batter into small balls and roll them onto the roughly chopped pistachios.

Bake them for about 17 mins at 170c. Dust the icing sugar on top of them.
