Malaysian Pork Noodle (Chee Yok Fan)

材料・調味料 (6 人分)
Flat rice noodle (beehoon)
500g
Yellow noodle
500g
Chicken broth
1L
Mince pork meat
250g
White powdered pepper
Salt
Lean pork meat
250g
Corn starch
Choy Sum
300g
Pork meatballs

Pork white fats

Green spring onion
2 stalk
Olive oil

作り方

Marinate the mince pork meat with a dash of pepper and a pinch of salt for 30 minutes.

Thinly slice the lean pork meat and marinate with 2tsp of cornstarch, dash of pepper and pinch of salt. Let it set for 30 minutes as well.

Wash, trim and cut the Choy Sum.

Cut the white pork fats into tiny small cubes, add some salt.

Boil water in a pot, add flat rice noodle to cook for 5 minutes. Remove and drain.

Boil another pot of water again to cook the yellow noodle for 3 minutes. Remove and drain.

Heat up the wok and pour olive oil in, when the oil is hot add the pork white fats to fry on medium heat until it becomes crispy and golden brown.

Remove fats from wok and pour the remaining oil in a ceramic boil and set aside.

Boil chicken broth in another pot, when the broth starts boiling add in pork meatballs to cook for 3 minutes, removed and set aside.

Add in 3 tsp of pork oil into the broth and add in the Choy Sum to blanch for few seconds until it becomes dark green.

Add in the lean pork slice and mince pork meat into the soup. Reduce the heat to low and let it simmer.

Add in the pork meatballs and Choy sum to the soup.

*add in some sesame oil and pepper for taste if you like.

Serving:

Grab a handful of rice noodle and a handful of yellow noodle and place it in a large deep bowl.

Pour the soup over the noodles. Add in some pork meatballs, pork slices and mince pork meat and some Choy sum as well.

Sprinkle the dish with some crispy pork fats, green onion and a dash of pepper.
ポイント

For those who likes it spicy;

You can cut some Birdseye chilli and add some soy sauce as a dipping sauce.

First time to see thus noodle for me.

I'm from Malaysia and we have different varieties of pork noodle. This is definitely a favourite of mine. Hands down.
