Chicken braised with ginger and caramel

My ultimate lazy chicken dish,so few ingredients but amazingly delicious.Chop up a whole chicken,place in a pot,add sliced ginger,caramel sauce,fish sauce,scallion,salt and a little water,simmered with medium low heat with lid covered,another five minute without lid til sauce reduced.So simple I cou
could hardly call cooking!

To: yuiwatchcat thank you,please try,serve this and nobody will believe it's that simple.If you use a small chicken,15mins is enough covered with lid,use around 2 tbs of caramel,also don't forget to stir around once for a while.

To: CloudGirl national dish in Vietnam,every family makes this!It's the caramel that used in desserts,it's been used a lot in Vietnamese cooking,even Chinese,to add colour and flavour sometimes.It's purely caramelized sugar and water to thin it down.
To: yuiwatchcat You are welcome! Caramel is essential in this dish,really not difficult to make,place sugar in a small pot,turn on medium low heat watch it turn to clear liquid and to dark amber liquid,add water to thin it down,takes about 10-15min for small small quantity,pls search the web for mo
To: yuiwatchcat more details.One note,pls do not add too much caramel,or it will become too bitter!I would say around 2tbs for a small chicken,also add some sugar at the end to adjust sweetness too.
