Porchetta style bacon chop

- 2 French trimmed bacon chops 1 clove garlic 1 stalk fresh rosemary 1 teaspoon fennel seeds 1 tablespoon Broighter gold garlic and rosemary rapeseed oil 25g smoked Abernethy

- · Split a pocket in the side of each chop.
· Crush the garlic, rosemary and fennel seeds with the oil in a mortar and pestle.
· Spoon half into the middle of the chops and reserve the rest.
· Brush each chop lightly with oil and place on a hot grill pan. Seal on both sides for 1 minute each and then lower the heat. Cook for a further one and half minutes each side.
· Add the remaining paste to the chops and baste with the smoked butter.
