Whisk eggs, sugar and a pinch of salt until fluffy.

Add oil and vanilla essence, mix well.

Add corn starch, mix well then add flour, baking powder and mix to a soft dough.

Take a piece of dough and roll between your palm to make a ball, you can make the size you want (i use a tablespoon as measurement to get uniform balls).

Place on a baking tray with parchment paper, leave 5cm between cookies.

Bake at 180°C for 15 minutes.

Melt chocolate over a double boiler or in the microwave. Chop/ crush the peanuts and set aside.

When the cookies have cooled, dip the top in chocolate and sprinkle some peanuts on and it's ready!
