Baklava

For the Baklava
1lb of mixed nuts finely chopped (i find pistachio & almonds give the best conbination but its entirely up to individual taste and what you prefer)
1 pkt of filo pastry
melted butter
For the syrup
1 cup of sugar
2 cups of water
4 tbls runny honey
1 piece of lemon rind
pinch of cinnamon (optional)
small pinch of nutmeg (optional)
first make syrup by putting all ingredients for syrup in pan, bring to boil and turn heat down to a simmer and simmer until reduced by 1/3 and syrup is sticky, remove from heat, cool and strain and cool until cold (syrup MUST be cold or baklava will go soggy n not be crispy which isnt nice to be honest)
brush oven dish with melted butter, layer 8 sheets of filo pastry buttering in between sheets but only lightly as you want pastry to remain crisp, spread a layer of chopped nuts over pastry and pat down slightly, layer again with 3 sheets of filo, then nuts and continue layering nuts with 3 sheets of filo until all of the pastry and nuts are used up and you finish with pastry on top,cut pastry into squares but do not cut right through to bottom of dish, brush with butter and bake in middle of oven at 180ºc/350ºf/gas mark 4 for 1 hr until crisp and golden.
remove from oven and while still piping hot pour over COLD syrup and if liked (as i do) sprinkle a little crushed pistachio's in centre of each little square, leave pastry to cool down and soak up syrup for at least a cpl of hrs but in all honesty preferably overnight as the longer the better, enjoy :)

you can experiment with different mixtures of nuts or even just used 1 type, like i said i find pistachio's work best but walnuts also work well, i find peanuts are not nice in this as much as i love them
Also when adding syrup at end always remember the syrup MUST be cold as if hot or even warm it just does not work and WILL make your baklave soggy and not crispy, trust me i know as i made this mistake the 1st time i ever made it and it was just a gooey nut pudding lol :)

yeh my kids and i do too, ive only made it a few times but def going to do it more, 1st time was a complete disaster it went all soggy(tho i must admit i still ate it was still nice n sweet lol)then a friend told me it was because i poured the syrup over while it was still hot so nxt time i left syr
