Cook sausage in olive oil and set aside. Using the same pan, sauté onions, tomatoes and bell pepper till brown. Add rice and stir frequently for 5 minutes. Add spices and seasonings. Pour in chicken broth and bring to a boil. Simmer for 10 minutes. Add sausage and green onions. When rice has soaked up most of the liquid, place shrimp and mussels on top. Cover and leave on medium heat for 10 minutes or until shrimp is fully cooked and mussels open.

Light hands when using spices. Add hot sauce for a little more of a kick and parsley for garnish.
