Nothing new about smoke salmon and potato salad,but let me talk about this marinated fennel.It's something I used to pair with smoke eel,a delicacy I love very much,unfortunately it's harder to find now and very expensive,so smoke salmon is my alternate here. The fennel is shaved very thinly,then marinated in beetroot juice and vinegar,love it!

I did not smoke the salmon,I wish I could,but I better leave cold smoking to the professionals.I do hot smoking(in wok) with many things at home,I love smoked food! Fresh fennel is very common in French cooking,essential with many seafood dishes,I love it's anise flavour,also good in salads and marinated!But it's mostly the fennel seeds that they use in Indian curries,and also responsible for making so many Italian,Mediterranean and even Chinese dishes so memorable,I am addicted to this spice!May be not so widely used in Japanese cooking,but please try it sometime!
