Carpaccio: sashimi grade chicken tender, topped with yellow pepper and homemade pesto sauce with a hint of Japanese sudachi citrus

Notes: The Japanese citrus called Sudachi's summery, dry tanginess is an additional great kick to the dish. However, I should be more careful next time about the overwhelming flavor of basil leaves since tender is very delicate in flavor.
