sweet potato

mackerel fillet

spinach

lime juice

pomegranate seeds

piri piri salt

white pepper

truffle oil

Pre heat the oven approx 5 minutes. Wash the potato before use, prick the potato just once using a knife or fork. Put the sweet potato into the oven and bake for 1 hour.

20 minutes before the end of cooking pre heat the grill. Once ready Cook the Mackerel for 5 minutes each side.

Rinse spinach and dry. Add a dash of lime juice, piri piri salt, white pepper and a few squirts of truffle oil and mix together, add to the plate. Sprinkle over some pomegranate seeds.

Finally dish up the potato cut in half and add a knob of butter and serve the Mackerel and enjoy.
