Quinoa & Tuna filling in baked Sweet potato 🍠 #organic

I baked the sweet potato for 50min in the preheated oven to 350F/200C, and take out the potato inside and filled the inside of the potato skin with sautéed quinoa, tuna, shimeji mushrooms, and red bell pepper. For the garnish on top, i sprinkled shredded cheese and fried cherry tomatoes and lastly baked the sweet potato in the toaster. #Lunch
