peel, remove seed and chop chyote into pieces. place into a pot of salted boiling water for approximately 5 minutes. drain water off and put chotes into a bowl to cool. heat olive oil in frying pan. cook turkey, add onion and garlic. saute and quickly add chyotes and season. stir fry some more and add chopped spinach. cook 1 more minute. place top on pan turn off stove. serve 20 minutes after covering.
