Pepper and eggplant pizza

Trying this platter style from Rome's Riscioli.I normally won't go for pizza that served by piece,but this is a famous item from a well established bakery,so who am l to argue...?

Yes,the very basic Italian summer flavors,eggplant,tomatoes and basil!
To my surprise,many Italians bakeries serve this,people just order by piece(some places even by weight!).I just want to get a feeling of how it's made,good practice for me shaping bread dough.
